Each year all of us in the Elmhurst office look forward to Kevin Peto's annual Veteran's Day Breakfast so we asked the chef a few questions about himself and the tradition ...

What started this annual tradition?
Just a way to show my appreciation for those that serve. V-Day has become even more significant to me now that my cousin is serving overseas in Iraq.
How many years now has this been done?
I started this in 2004, so this would be the 6th year.
What's on the menu this year as opposed to past years?
I try and do something different every year and try to be creative. This year was a Crock Pot breakfast with eggs, cheese, hash browns, hot house peppers, onion, & ham.
If you could chose anything, what is your favorite breakfast?
Breakfast is my favorite: Steak & Eggs, Crepes, Pancakes, French toast I like everything for breakfast. I also enjoy "brinner" (breakfast for dinner). My family has a long tradition of going out to diners for breakfast.
Are you the chef at home too, or is this just an annual event?
I am a chef at home. My wife shares some of the cooking duties, but I pretty much prepare most of the meals.
